FR Jean Pabiot "Domaine des Fines Caillottes" Pouilly-Fumé

Son and grandson of Jean Pabiot, Alain and Jérôme manage the Domaine des Fines Caillottes within the Pouilly-Fumé appellation. The terroirs, mainly clay limestone, are therefore very varied: white limestone pebbles known as “caillottes”, marl with small fossilized oysters (kimmeridgian) and flint. This diversity of terroirs gives the estate’s wines their aromatic complexity.The “Domaine des Fines Caillottes” Pouilly-Fumé is the blend of wines from the great diversity of terroirs and vines of various ages from the estate.

The vineyards are sustainably managed, certified TERRA VITIS, only organic fertilizers (manure) are used, green harvesting and leaf removal are carried out as necessary.

APPEARANCE Medium deep straw yellow.

NOSE Very expressive nose on citrus aromas, with touches of tropical fruit, including peach, mango and apricot.

PALATE Young and characterized by green apple, citrus and herbs, hints of tropical fruits and minerals, with a fine balance between fruit and acidity.

AGEING Maturing on fine lees for several months.

PAIRING Delicious by itself as an aperitif, it is also excellent served with seafood, fish and goat cheese in particular.

READINESS FOR DRINKING Drink well now and during the 4 years following the harvest to fully appreciate the freshness and the youthful aromas.
