The Cantina Produttori di Valdobbiadene Val D’Oca is one of the leading producers of Prosecco, the most famous Italian sparkling wine made with Glera grape, cultivated and vinified in the hills of Valdobbiadene, the birthplace of Valdobbiadene Prosecco Superiore DOCG.
However Val d’Oca also produce Prosecco DOC coming from lands in the province of Treviso in a beautiful setting amid rolling hills between Asolo and Conegliano. This nice Prosecco Rosè is obtained from the separate vinification with soft pressing of the Glera and Pinot Noir grapes, from the subsequent static decantation and fermentation at 18 ° C with yeasts selected for glera and finally from the maceration in red for Pinot Noir.
The blend of the rosé base is created before the second fermentation in an autoclave with the charmat method (60 days).
